Given the variety of ships from brigs to 110gun sailing ships, the transition from sail to steam and the changing armaments carried during the Victorian period, I suspect you will have difficulty in finding the information you’re after. The Navy Lists provide the complement of officers carried, but the only way I can think of to establish the composition of the crew, including the Royal Marines, is to do an analysis of a particular ship’s Muster Roll. As an alternative, a similar analysis of the medal rolls, where rates are noted, would provide the same information – neither route is easy!

Further to the above post and as an exercise I did an analysis of the crew of HMS Furious from the Crimea Medal roll. I selected her because she was one of the navy's steam ships and had more than a couple of guns:
